Chicken Soft Tacos
Ingredients:
- 1 – ½ lbs. frozen, boneless/skinless chicken breasts
- 14 ½ oz. can low-sodium diced tomatoes with green chilies
- Taco seasoning
- Organic whole wheat or gluten-free tortillas
Directions:
- Lay the chicken breast in the bottom of a 5- or 6- quart slow-cooker.
- Mix diced tomatoes with the taco seasoning and pour over chicken.
- Cover and cook on low for 6-8 hours.
- Shred chicken with a fork prior to serving.
- Serve in warmed soft tortillas.
- Add additional toppings as desired: salsa, guacamole, fresh tomatoes, and/or cheese.
